Nourishing Detox Parsnip and Cauliflower Soup

All too often, we think of salads and vegetable juicing as the ideal path to a nutritious detox effort. It's time to consider soups. Get a jumpstart on your New Year's resolutions by giving this body-detoxifying soup a try.

There's nothing like a wholesome and delicious soup to nourish the body during the cold winter months. This simple parsnips and cauliflower concoction will warm you up and leave you feeling satisfied. It has a depth of flavor and is perfect for a winter detox. It brings protein-rich, gut-healing bone broth and important detox-supporting vegetables into your diet.

 

What You'll Need
~

 

  • 3-4 parsnips
  • 1 leek
  • 1 medium cauliflower head
  • 2 garlic cloves
  • 1 tsp ground cumin
  • 1 tsp fennel seeds
  • 1 tbsp extra virgin olive oil
  • 1-2 cups vegetable stock or bone broth

   

 

Cooking Instructions
~

  

  1. Preheat oven to 350º F
  2. Place thinly sliced parsnips on an oven tray, drizzle with olive oil, and season with salt and pepper
  3. Place in oven and roast for 25-30 minutes or until golden brown. Put off to the side
  4. Heat a pot over medium heat for the soup
  5. Sauté leek ins olive oil until softened, about 4-5 minutes
  6. Add garlic and fennel seeds, lightly cook until fragrant 
  7. Add in parsnips and season with salt and pepper
  8. Add broth and bring to a boil and simmer until parsnips are cooked
  9. Add chopped cauliflower florets, and simmer for another 10-15 minutes 
  10. Allow soup to cool, then blend (in blender or food processor) in batches until you have a smooth purée
  11. Taste and add salt and pepper, if needed and garnish as desired
